সারাদেশের মত টাঙ্গাইলের মির্জাপুরে বসেছে শীতের অস্থায়ী পিঠার দোকান। শীতের শুরুতেই রাস্তার ধারে মাটি ও গ্যাসের চুলা নিয়ে বসে যান মৌসুমি পিঠা বিক্রেতারা। এসব দোকানে মেলে চিতই পিঠা, ভাপা পিঠা, তৈল পিঠা, পাটিসাপটা, ডিমচিতই, সমুচা পিঠা, নকশি পিঠা । গরম-গরম ধোঁয়া ওঠা চিতই পিঠার মূল আকর্ষণ ভর্তা। খেজুরের গুড় ও নারকেল দিয়ে তৈরি ভাপাও পাওয়া যাবে এসব অস্থায়ী পিঠার দোকানে।
গত কয়েক দিনে মধ্য মির্জাপুর পৌর এলাকায় বাজারের বিভিন্ন স্থানে রাস্তার পাশে, মোড়ে, ফুটপাতে, পাড়া-মহল্লায় শীতের পিঠা বিক্রি হতে দেখা যায়।
কথা হয় নাজমুল হাসানের সঙ্গে। গরম চিতই পিঠায় ফুঁ দিতে দিতে সরিষার ভর্তা লাগিয়ে খাচ্ছিলেন তিনি। নাজমুল হাসান বলেন, বাড়িতে যেসব পিঠা খাই, সেগুলোর স্বাদ একরকম। সেগুলো আবার রেখে রেখে খাই ঠান্ডা হয়ে যায়। এখানে গরম-গরম খাওয়ার স্বাদ অন্য রকম।
দোকানিরা বললেন, চিতই পিঠার মূল আকর্ষণ কয়েক পদের ভর্তা। সরিষা, কালোজিরা, ধনেপাতা, শুঁটকি ভর্তার চাহিদা বেশি। একটি চিতই পিঠা বিক্রি হয় পাঁচ টাকায়। ভাপা পিঠা বিক্রি হচ্ছে ১০ টাকা করে। চিতই, ভাপার পাশাপাশি নারকেল, কলা, তাল দিয়েও তৈরি পিঠাও দেখা গেছে কিছু দোকানে। মাংস দিয়ে বানানো পিঠা পাওয়া যায় কোথাও কোথাও।
মির্জাপুর বাজারের কাকলী মোড়ে রোডের পিঠার দোকানি সালাম জানান, প্রতিদিন তিনি বিকেল ৫টা থেকে রাত ৯টা পর্যন্ত প্রায় ৭০০ থেকে ১০০০ টাকার মতো পিঠা বিক্রি করেন। লাভ থাকে ৩০০ থেকে ৪০০ টাকার মতো। তিনি দিনে ৫কেজির মতো চালের গুঁড়া, পরিমাণমতো গুড় ও নারকেল জোগাড় রাখেন। বিকেল ৫টার দিকে শুরু হয় তাঁর পিঠা বিক্রি। রাত ৯টার দিকে উপকরণ শেষ হলে দোকানও বন্ধ করে দেন তিনি।
ভাপা পিঠাতে গুড়, চিতই পিঠাতে ধনে পাতা কিংবা শুঁটকি ভর্তা দিয়ে জমজমাট ব্যবসা চলছে।ক্রেতাদের খাবার স্বাদ আরও বাড়িয়ে দিচ্ছে। গরিব লোকের কর্মসংস্থান হয়েছে। চলছে সংসার। পিঠা তৈরির মাধ্যমে একদিকে যেমন বাঙালি নারীর শিল্পগুণের পরিচয় ফুটে ওঠে, তেমনি পিঠা যদি বাণিজ্যেক ভাবে তৈরি করা হয় তা থেকে অর্থনৈতিক মুক্তি আসতে পারে।
